Italian Pasta Salad

Ingredients:
– 16 oz rotini pasta (tri-color)
– 1/2 green bell pepper (chopped)
– 1/2 red bell pepper (chopped)
– 1/2 orange bell pepper (chopped)
– 3 TBPS fresh parsley (chopped)
– 1 cup mozzarella pearls
– 1 pint cherry tomatoes (chopped)
– 1/4 cup red onion (chopped)
– 1 cup chopped hard salami
– 1/2 TSP Italian seasoning
– 1/3 cup shredded parmesan
– Salt and pepper to taste

– **DRESSING**:
– 1/2 cup vegetable oil (I added some garlic infused olive oil too)
– 1 TSP sugar
– 3 TBSP red wine vinegar
– 1 TSP dijon mustard
– 1/2 TSP Italian seasoning
– Salt and pepper to taste

DIRECTIONS:
1.) Add all chopped ingredients together
2.) Add dressing and mix into salad
3.) Chill for 4+ hours before serving
