Ingredients:
– 5 cups arugala
– 1/2 cup shaved parmesan
– 1 cup chopped cherry tomatoes
– 1/3 cup pepitas
– 1/3 cup hemp seeds
– DRESSING:
– 2 TBSP fresh squeezed lemon
– 1 TBSP balsamic vinegar
– 2 TBSP EVOO
– 1/2 tsp salt
Directions:
1.) Whisk together ingredients for dressing in separate bowl and toss with other ingredients
